RECIPE OF THE MONTH


May 2001: SAOR

Preparation time: 40 minutes 
Cooking time: 30 minutes
Calories per serving: 650 

Ingredients for 5 servings:
1500 gr. of sardines (or soles) 
olive oil
600 gr. of onions
vinegar
white flour
raisins
pine nuts
spices (cloves, cinnamon, anise, pepper, salt)

Preparation:
Clean the fish and take the fish bones out, dip it into the flour and fry in olive oil. 
Fry the onions in oil and add the vinegar and the white wine, boiling them for 10 minutes. 
Alternate layers of fish and onions adding (if you like) raisins, pine nuts and spices and finishing with the wine and vinegar sauce.
Allow it to marinate at least one day.

Nonna Maria’s advice:
I first cook the onions with a little water over low heat and I add the oil only some minute before they are cooked, so they result lighter.
But the most important detail is that there should be plenty of oil and vinegar sauce so the fish is completely covered with it.
