RECIPE OF THE MONTH


August 2001: PEARA’ SAUCE (SALSA PEARA')

Preparation time: 30 minutes 
Cooking time: 2 hours
Calories per serving: 380

Ingredients for 5 servings:
100 gr. of ox bone marrow
50 gr. of extravirgin olive oil
150 gr. of breadcrumbs
1 liter of broth 
3 spoons of grated parmesan 
salt 
plenty of pepper 

Preparation:
Dissolve the ox bone marrow and the oil in a pan and add it to the breadcrumbs melting the ingredients well.
Add warm broth, salt and pepper and let it to boil slowly over low heat for 1 hour and a half or 2 without stirring. 
When almost cooked add the parmesan and stir.
Serve after 10 minutes.
It is optimal with all the kinds of boiled meat.

Nonna Maria’s advice:
I add to the boiled meat also a piece of boiled tongue and boiled breast, I like them so much!
